Domaine Gachot-Monot is a family run estate founded in 1890. Covering a total surface area of 12 hectares, it is spread over 3 different communes – Corgoloin, Comblanchien and Nuits-St-Georges.
The year 2003 saw the construction of a new winery and wine-cellars, as well as the recognition of Damien Gachot as one of the best young talents of the year, a title that he obtained once again in 2006.
Vines are cultivated with the utmost respect for nature and are planted at a density of 10,000 vines per hectare. Yields are kept low by appropriate pruning and disbudding.
Harvesting is done by hand, after which the grapes are transported quickly to the winery in order to limit oxidation. The grapes are completely destemmed with a fermenting time of 10 to 15 days. Maturing takes place in oak barrels (of which 20 – 30 % are new) for 12 to 18 months.
