Regis Minet produces a number of cuvees of Pouilly Fme. The two selected were produced from vines of some 25-35 years of age which are grown on terroir of kimmeridgean clay and coquillage.
All fermentation and maturation takes place in stainless steel. The wines are fermented on their lees at a temperature of 18 to 20 degrees.
The 03 Vieilles Vignes is very mineral in character whilst the 04 Vin du Desert is, surprisingly for the vintage, much riper and more fruit driven but still with a fabulous, racy acidity.
