Vilmart’s 11 hectares of Premier Cru vines lie in Rilly-la-Montagne, although there are a few vines found just over the border in the neighbouring village of Villers-Allerand.Member of Ampelos (promotion of organic and sustainable viticulture) all of Vilmart’s wines are fermented and aged in oak.
The Grand Cellier (70% chardonnay, 30% pinot noir) is usually a blend of three different years, aged in foudres for ten months.
The vintage wine is the Grand Cellier d’Or, (80% chardonnay, 20% pinot noir) aged in 600-liter demi-muids - responsible for the toast & vanilla elements of this rather harmonious wine.
Also blended for 80% chardonnay and 20% pinot noir - 2 prestige cuvées - The Cuvée Création comes from 40 year-old vines in two adjacent vineyards in Rilly, Blanches Voies and Basses Haye Barbettes.
The Coeur de Cuvée has cult status. Crafted from a parcel of vines over 50 years old in the vineyard of Blanches Voies, the finest 30% of the cuvee is selected from the middle or heart (coeur) of the pressing. It is then fermented and aged in 1-3 year old barriques.
Vilmart produces two rosé champagnes.. The Cuvée Rubis from 90% pinot noir, 10% chardonnnay is an NV but is normally made from 2 vintages.
The 2000 bottle vintage rose is the Grand Cellier Rubis - made only when the pinot noir is deemed of the highest quality, 40% chardonnay adds finesse and elegance.
